A few times per month I like to cook dishes that are what I call "no frills" but are still pretty tasty. My two oldest boys love, love, love Mexican food-my youngest...not so much (he has to be in the mood). He enjoys it twice a month, that's about it. To me, one of the simplest things to cook are burritos. You see, I have spoiled my kids with really good cooking and to them, even a "no frills" burritos would be jammed packed with meat, beans, rice, cilantro, onions, and cheese (sour cream optional). Not this week fellas! However, the salad was jammin'! I made a "full of frills" salad which consisted of: lettuce, tomatoes, apples, blueberries, strawberries, and cucumbers. I topped it with a home-made white vinaigrette and it was delicious.
The above picture is what a loved one might look like when you announce a new dish, family adventure, or something outside of their comfort zone. You are going to have to TRUST YOURSELF! You know your family better than anyone else. You know their likes, dislikes, temperaments, and faves. Take that information and Go For It! I knew that my boys were going to be fine with plain old burritos with beans, cheese, meat and a delicious salad. You know what else, the one who didn't want the burrito had left overs! Hahaa.
We aren't going to please everyone all of the time, and that is more than okay. Do worry that 100% of the people you are trying to impress, or please, aren't going to be overjoyed with what you have put out there. Again, that's okay. Trust that you've had a great idea, did your very best, and it's good enough. Sometimes what you have to give is just meat, beans, and cheese with a pretty awesome salad.
